Pad Tai
( Fried Nodle Thai style )

Ingredients

300 g fresh flat rice-flour noodles, 10 prawns, 500 g bean sprouts, 3 duck eggs, 1 cake hard soy bean curd, 1/2 cup ground roast peanuts, 1 tablespoon chopped garlic, 1 tablespoon chopped shallots, 4 tablespoons sugar, 1/2 cup oil 3 tablespoons tamarind juice, 50 g chives, 2-3 tablespoons each of fish sauce and lime juice, 1 tablespoon dried pound chilies.


Preparations

  1. Soak the noodles in warm water to soften.

  2. Heat 3 tablespoons oil in a wok and sauté garlic and shallots. Add the noodles, fish sauce, lime juice, tamarind juice quickly fry to prevent sticking, set aside the noodles in a plate.

  3. Put another 3 tablespoons oil into a pan, fry prawns, bean curd, chilies together.

  4. Put the remained oil into a pan, break the eggs into pan and scramble spreading egg thoroughly, add the noodles, bean sprouts, chives, mix well.

  5. Serve garnished with peanuts, bean sprouts, banana blossom, chives.
